Pecorino is a white grape variety, of ancient diffusion in the Piceno area. The origin of this variety has not been made very clear, the first bibliographic traces of pecorino date back to the time of Cato the Censor who classified it, together with other vines), in the group of amines. Today, thanks to a work of recovery and selection and the audacity of a few winemakers, the first wines are starting to be available.

  • Harvest: by hand, in crates, early in the morning.
  • Vinification: with selection and collection in bins with storage in cold rooms from 5 to 10 days at 0 ° C, destemming, very soft squeezing in the absence of oxygen, yield of about 50% with static cleaning of musts, inoculation of selected yeasts, fermentation at a controlled temperature of about 15 ° C for about 15 days.
  • Refinement: With fine lees for 3 months and the remaining refinement of 3 months in glass.

ORGANOLEPTIC CHARACTERISTICS

Brilliant straw yellow wine that stands out with aromas of elderberry, grapefruit and ripe yellow pulp fruit. The acidulous vein and the sapidity are balanced with an excellent structure, a good persistence and a great moribidity.

FOOD PAIRINGS

Raw fish, salami, white lasagna, risotto, poultry and medium-aged cheeses.

METHOD OF CONSERVATION

The bottle is kept horizontally in a preferably dark environment, away from noise, with a temperature between 12 – 18 degrees and a humidity of around 60 – 70%. The wine lends itself to aging for a further 4-5 years.
