Produced with 100% Nero di Troia small-berry grapes according to the personal interpretation of Conte Spagnoletti Zeuli.
A grape which, grown on espalier vines over 20 years old, reaches perfect ripeness with intact and dry fruits. In fact, after reaching ripeness, in the first ten days of October, the bunches undergo the torsion of the peduncle, without these detaching from the plant. The grapes are then left for a few more days attached to the branch. Doing so removes the possibility of the grapes from continuing to feed and grow, forcing them to wither caused by the heat of the sun and the air.
Withering the grain it will concentrate sugars and aromatic substances giving life to a “Meditation wine”, on September 23rd.
The ideal combination is with intense and succulent red meats, first courses with strong and lightly spiced sauces, cheeses and savory cold cuts.
